Objective: to analyse the biochemical properties of saliva. Method: systematic review. Results and Conclusion: The biochemical properties of saliva, such as flow, pH, buffering capacity and biomarkers play a key role in protecting oral health, acting as natural barriers to diseases such as caries and periodontitis. These properties are influenced by internal factors, such as systemic conditions, and external factors, such as diet and use of dental products.
